Nourished Steamed Egg Pudding

If you have never tried a Steamed Egg Pudding, you’re in for a treat! This recipe is based off of the traditional Chinese Silky Egg/Steamed Egg Pudding, adapted for dietary preference, texture, flavour and adjusted to work in an Instant Pot.

This is such an easy and efficient recipe, I am confident it will end up in your regular recipe rotation. Not only can you make this with any savoury toppings that you desire, this can easily be made sweet for a warm and comforting dessert! The possibilities are truly endless.

PRO TIP: This recipe can be made ahead of time, refrigerated, then served cold or at room temperature. 



The secret to keeping the pudding silky smooth is a combination of straining the egg mixture and adding water. Straining though a very fine mesh strainer is what keeps out all of the… how do I say this nicely… thick and globby parts of the egg whites. This leaves behind only the smooth, melt in your mouth, egg mixure.

Adding water is what builds on that “silken” texture. We are essentially thinning out the eggs. It is also important to ensure that the water you are adding is not hot or cold, it should be warm.


PRO TIP: Replace the water in the recipe with your favourite stock (chicken, beef, vegetable, bone broth, etc) for an extra flavourful treat! 



Finding the perfect timeframe for steaming & natural release in the Instant Pot took me a lot of trial and error. While this recipe may work great for me and for the bowl that I steam in, be aware that this may be different for

you and your own equipment. As a general rule of thumb, for any model of the Instant Pot, you want to choose the “Pressure Cook” setting. Do not be tempted to use the “steam” or “egg” settings, as these will produce inconsistent results.

The recipe works extremely well with substitutions. For an example, if you wish to reduce the quantity of fat, simply use half egg whites and half whole eggs. This results in a higher protein, lower fat, silky smooth egg pudding that will fit into your macros. You can alter this as much as you desire, however, ensure that you use a minimum of 3 whole eggs. Using less than that will result in a watery pudding. You need some fat to emulsify the moisture.

General Rules: 

  • Use the Pressure Cook setting on HIGH.
  • Always tightly seal your bowl with Tinfoil prior to steaming.
  • Ensure the water used in your Egg Mixture is warm. Not hot, not cold.


PRO TIP: Thinner bowls will require reduced cook time. Thicker bowls will require increased cook time. Use 1.5-2 minute adjustments until you find the correct cook time for your bowl.

Ingredients

  • 6 Large Eggs at room temperature
  • 1 Cup Warm Water amount needed will vary *see below
  • Any desired toppings Butter & Goat Cheese pictured

Instructions

  • Whisk all 6 Eggs together in your Measuring Cup. Take note of where the whisked eggs (without the whisk inside) measure to on the cup.
  • Add the exact same amount of Warm Water, as there are Eggs, into the Measuring Cup. Example: if the eggs measure up to the 1 cup mark, add in 1 cup of water.
  • Whisk the Water and Eggs together very thoroughly.
  • Place your Fine Mesh Strainer over top of the dish you will be steaming in. Slowly pour the Egg Mixture through the Strainer until all has been strained.
  • Tightly cover the top of the Dish with Tinfoil.
  • Plug in your Instant Pot, place the Trivet inside of the inner pot and pour in some water to come up to just beneath the Trivet.
  • Place your covered Dish with Egg Mixture onto the Trivet and seal the lid (ensuring the pressure is sealed).
  • Select "Pressure Cook" on HIGH. Set to 9 Minutes cook with a 5 minute Reminder (Natural Release).
  • When finished, release the pressure from the Instant Pot and very carefully remove your dish from the inner pot.
  • Peel back the tinfoil and check to ensure the pudding is done. It should be JUST set in the very middle. If you lightly tap the Dish, everything should jiggle like jello.
  • Before it cools, toss on any desired toppings such as Butter, Goat Cheese, Shredded Cheese, etc and allow to melt on top.
  • Add a sprinkle of Salt or Soy Sauce (or any other desired seasonings) and dig in! But be warned - she's gonna be HOT.
